Spiced Chocolate Chip Toffee Pretzel Cookies

I am so excited to get the recipe for these spiced chocolate chip toffee pretzel cookies into your hands and devoured! These cookies are loaded with delicious goodies in every single bite and I will guarantee you that these will be utterly irresistible. I love these cookies because they are a fall spice inspired cookie without the pumpkin – I love pumpkin spice in the fall, but I also think there is room for something different, and I would like to believe you have never come across a cookie quite like this one before! Fall spices, sweet toffee bits, crunchy pretzels and my infamous, chewy and soft chocolate chip cookie dough. What’s not to love!
The Ingredients Â
What makes these cookies special is all of the goodies we have stuffed in to them for a spiced fall treat a little reminiscent of a Halloween goodie with so many elements. We use cinnamon, ground cloves and all spice in these cookies for a well balanced spice that is not too over powering. We use Skor toffee bits and chocolate chips for their crunch and melting factor and then add in the pretzels for a salty and unexpected element.
- 1/2 cup salted butter room temperature
- 1/4 cup white sugar
- 1/2 cup brown sugar
- 1 tsp salt
- 1 tsp vanilla extract
- 1Â egg
- 1 tsp cinnamon
- 1 tsp ground cloves
- 1/2 tsp allspice
- 1.25 cup flour
- 1/2 tsp baking soda
- 1 cup crushed pretzels
- 3/4 cup skor toffee bits
- 3/4 cup chocolate chips
How to Make Them
- Start by gathering all of your needed ingredients, setting aside, and preheating the oven! You don’t want to get half way in to baking these cookies and realize you are missing something!
- Next, you are going to add your room temperature butter and sugars to your electric mixing bowl. If you don’t have an electric mixing bowl you can use a hand blender, no problem! Combine the butter and sugar well until a paste has formed.
- Next you are going to add in your salt, vanilla, egg and spices. Again, give this a good mix to ensure it is all evenly distributed throughout the wet ingredients.
- Time for the dry ingredients! Combine your flour and baking soda in a separate bowl and then gradually add to your wet mixture until fully combined.
- Gather your chocolate chips, toffee bits and crushed pretzels. Gently fold these ingredients in to your cookie dough, I prefer to do this by hand by whatevr works!
- Scoop out two tablespoon sized balls of cookie dough and transfer to your baking sheet, baking 9 cookies at a time is usually most successful space wise. Bake for 11-12 minutes at 350 degrees.
- Let the cookies cool before removing them from the baking tray. Store in an airtight container for a week! Makes a dozen.
Bakers Notes
You will want to use a room temperature butter for these spiced chocolate chip toffee pretzel cookies but if you haven’t planned ahead enough and are taking your butter straight from the fridge, cut it up into cubes and stick it in the microwave for 10-15 seconds just to soften it, but don’t melt it! I too have forgotten to take my butter out ahead of time and this trick always works.
Two tablespoon sized balls of cookie dough is a generous serving, and you can make smaller cookies and yield more, but I do really love an oversized, jumbo cookie. If making something a bit smaller reduce your cook time by a minute or two.
Like most of my recipes, these spiced chocolate chip toffee pretzel cookies freeze incredibly well. I would recommend baking them, letting them cool entirely and then freezing them in a freezer safe ziploc bag. Alternatively, you can freeze the uncooked balls of cookie dough and then pull them form the freezer, let them thaw and then bake them. Whatever works for you!
