Peanut Butter Snowballs

Peanut butter snowballs is recipe #5 of our “24 Days of Christmas” Holiday series where I share 24 recipes over 24 days as a virtual advent countdown to Christmas. Christmas is my favourite holiday, especially when it comes to baking, and I think there are endless creations that we can come up with to reflect the holidays. The Recipe

You will not believe how incredibly easy these peanut butter snowballs truly are! I feel like chocolate peanut butter is a fan favourite flavour combination, and throw some festive sprinkles on there and we have a Christmas delicacy!

This is one of the Christmas recipes my Mom used to make every holiday season, and it inevitably makes me think of her for that reason.

For this recipe, all you have to do is combine the peanut butter, butter, icing sugar and vanilla in a bowl and mix well. You will form these into little balls and then dip them in a chocolate of your choice! Put these on a parchment lined cutting board and in to the fridge for a couple hours to set and you have peanut butter snowballs for everyone to enjoy!

Peanut Butter Snowballs

Ingredients

  • 1 cup peanut butter
  • 1/4 cup salted butter room temperature
  • 2 cups icing sugar
  • 1 tsp vanilla
  • 1 tsp salt
  • 2 cups white chocolate melting wafers

Instructions

  • In an electric mixer, combine peanut butter, butter, icing sugar, vanilla and salt and mix well on medium speed for a few minutes. You want this to create a smooth, well combined mixture.
  • Once combined, form 2 tbsp sized balls of your peanut butter filling. Roll these with your hands until you have made 10-12 balls.
  • Melt your white or milk chocolate wafers, whichever you have chosen to use! Melt these well and put it in to a shallow bowl. Dip your peanut butter balls into the melted chocolate and use a fork to pull them out to allow the excess chocolate to drip off.
  • Place the dipped peanut butter balls on a parchment lined cutting board or plate and stick in the fridge for 1-2 hours to allow to set.
  • Makes 10-12 balls. Store in the fridge or freezer!
