Peanut Butter Snowballs

Ingredients
  

  • 1 cup peanut butter
  • 1/4 cup salted butter room temperature
  • 2 cups icing sugar
  • 1 tsp vanilla
  • 1 tsp salt
  • 2 cups white chocolate melting wafers

Method
 

  1. In an electric mixer, combine peanut butter, butter, icing sugar, vanilla and salt and mix well on medium speed for a few minutes. You want this to create a smooth, well combined mixture.
  2. Once combined, form 2 tbsp sized balls of your peanut butter filling. Roll these with your hands until you have made 10-12 balls.
  3. Melt your white or milk chocolate wafers, whichever you have chosen to use! Melt these well and put it in to a shallow bowl. Dip your peanut butter balls into the melted chocolate and use a fork to pull them out to allow the excess chocolate to drip off.
  4. Place the dipped peanut butter balls on a parchment lined cutting board or plate and stick in the fridge for 1-2 hours to allow to set.
  5. Makes 10-12 balls. Store in the fridge or freezer!
