Lemon Blueberry Sugar Cookies

Ohhhh summer. I get it, it’s hot outside and you don’t really want to turn on the oven and bake. But what pairs better with summer than citrus and berries? If you ask me, nothing, and one thing worth baking this summer is a dessert that has both those things!

If you are after a cookie that is perfect for summer celebrations, then these lemon blueberry sugar cookies are guaranteed to do the trick! These cookies are packed with whole blueberries, lemon juice and lemon zest for the perfect flavor combo. As if they could get any better, I then roll these cookies in white sugar before baking and drizzle them with melted white chocolate once baked. I can’t think of any better cookie than these, and I really hope you enjoy them!

These cookies are relatively simple to make. The recipe includes your basic baking staples along with the lemons and blueberries.

The Ingredients

You really just need the basics for this recipe. Grab your flour, white sugar, white chocolate, baking powder, and baking soda from the pantry, yes, we are using both! Baking powder and baking powder sometimes feel synonymous when we are cooking but they actually serve quite different purposes, especially in a baked good with an acidic component!

Generally speaking, baking soda works best when there is already an acidic component to a recipe, such as lemon juice. On the other hand, baking powder is a more complete substance and does not require an acidic component to do it’s job. In the long run, baking soda and powder both work by causing a carbon dioxide reaction that produces bubbles in your mixture that helps make the baked good light and fluffy. You could likely get away with just one in this recipe, but after many trials and error I prefer the combination of both for a baked good that is thoroughly light and fluffy.

Ok, let’s get back to the ingredients! From the fridge grab unsalted butter, lemons, an egg and frozen blueberries. Now it is time to bake!

The Steps

  1. First step is to preheat your oven and grab a mixing bowl. I prefer to mix these cookies by hand because the blueberries are delicate.
  2. Next, start preparing your ingredients. Zest and juice your lemons and set this aside.
  3. Into your mixing bowl add your melted butter, egg, and white sugar and mix this really well until everything is dissolved. Once well mixed add your lemon juice and zest in to the same mixing bowl and give it a good whisk.
  4. It is time to combine your dry ingredients! Combine your flour, baking soda, baking powder in a seperate bowl and gradually add to the wet mixture, stirring often for a thorough mix.
  5. Once your ingredients are all well combined it is time to fold in your frozen blueberries Before adding in, toss your blueberries in 2 tbsp of flour. This prevents them from becoming soft and mushing and sinking to the bottom of the cookie.
  6. Time to scoop out your 2 tbsp sized balls of cookie dough! The fun part! Scoop out your dough and roll it in to balls and then roll in your 1/4 cup of white sugar, coating all sides. Do this to all of your cookies and then place them on a baking sheet.
  7. Bake 8 cookies at time. Bake them as a full ball of dough without flattening for the first six minutes and then pull them out and flatten them wit the bottom of a glass cup and bake for another 6 minutes, 12 minutes in total.
  8. Once they are baked let them cool and drizzle them with your melted white chocolate. Don’t skip this! It is so tasty! Stick these in the fridge to set and enjoy!

Ingredients

  • 2 + 3/4 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup white sugar
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 cup melted butter
  • 1 egg
  • 1 cup frozen blueberries
  • 1/4 cup white sugar and 1/4 cup white chocolate for topping

Instructions

  • Start by preheating your oven to 350 degrees and grabbing a lined baking sheet.
  • Melt your butter and add it to a mixing bowl with the sugar, egg, lemon zest and lemon juice.
  • Combine your flour, baking soda, baking powder and then gradually add to the wet mixture mixing well.
  • Toss your frozen blueberries in 1 tbsp of flour and then add to the mixture and fold in.
  • Scoop out two tbsp sized balls of dough and roll the dough in the extra sugar you have for coating the cookie. Do not flatten yet! Bake these as a ball of cookie dough for 6 minutes, pull the tray out of the oven and flatten the dough with the bottom of a glass cup, then put it back in the oven to bake for another 6 minutes! Flattening the cookie half way through cooking it prevents it from cracking.
  • Once baked, let the cookies cool before drizzling with melted white chocolate. Set these in the fridge to set and then enjoy!!
