Birthday Cake Cookie

We all have those people in our lives who just aren’t really a birthday cake fan, and that is why I created these birthday cake cookies! These are a soft, buttery cookie dough filled with your favourite sprinkles. There is nothing about this birthday cake cookie that you won’t love! And trust me, you don’t need a birthday occasion as an excuse to make these! You can use any of your favourite sprinkles to decorate these.

The Ingredients

You really just need the basics for this recipe, your classic pantry staples plus eggs and butter.

For dry ingredients you need white, unbleached all purpose flour, most of the time I bake with this! We use a combination of brown and white sugar, vanilla extract and almond extract. The almond extract is optional but adds a delightfully sweet, nutty flavour to the cookie dough. Finally, don’t forget to grab your salt, baking powder and baking soda. I’ve chatted about this in other recipes, but I often use a combination of baking powder and baking soda because of the magically light, fluffy dough it typically creates. I feel like all bakers have different perspectives on the baking soda vs powder debacle, but this is my take!

For perishable ingredients, you will need unsalted, room temperature butter and two large eggs. For most of my baking recipes I opt for unsalted butter simply because I add salt to most of my recipes, and you have more control over the final amount of salt added to your baked good when it is added versus integrated in to your butter. In this recipe, we melt the butter to create a softer cookie, spreadable cookie dough.

The Steps

Like most cookie recipes, there is not too many steps to this one.

  1. Always start by preheating your oven and pulling out your ingredients, I grab all of my ingredients right from the start so that I don’t get half way through the recipe and realize I am forgetting an ingredient!
  2. Next, melt the butter and add it to your mixing bowl with your sugar, eggs and extracts. We add the extracts to the wet mixture to make sure they are thoroughly distributed. Add in your sprinkles here too! Any of your favorite sprinkles will do the trick, and it is an easy way to make this recipe festive!
  3. In a separate bowl simply combine your dry ingredients, and whisk these together well. Again, we combine the dry ingredients separate from the wet so that they are well mixed together when they are added to the wet mixture.
  4. Mix the wet and dry mixture well until you get a good consistency in your dough. Scoop out two tablespoon sized balls of cookie dough onto your baking tray and baked for 10 minutes.
  5. This recipe makes about 12-15 cookies and they are perfect for freezing, just let them cool entirely first!

Ingredients

  • 1/2 cup unsalted butter melted
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 tsp almond extract
  • 3/4 cup sprinkles
  • 2 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda

Instructions

  • Step one is reheat the oven to 350° and gather all of your ingredients.
  • Melt the butter and then add it to a mixing bowl along with your sugar, eggs, and extracts. Mix this well, and once combined add sprinkles of your choice.
  • Combine the flour, baking soda, baking powder, and salt in a separate bowl and mix well. Gradually add this to your wet mixture and whisk until you get a thoroughly mixed dough consistency.
  • Time to scoop these onto a cookie sheet! I scooped 2 tablespoon sized balls of cookie dough onto the cookie sheet. These don’t spread a ton so you could fit eight or so per sheet.
  • Bake for 10 minutes and then let them cool before moving them from the sheet. This recipe makes 12-15 cookies.
