Swiss Cheese Stuffed Breakfast Croissant

The stuffed breakfast croissant is revolutioanry if you ask me. Why not stuff a buttery, soft croissant with all of your favorite breakfast foods? It is perfection!
The bulk of the time taken for this recipe is in the preparation. The recipe below makes 4 servings but you can easily double or triple it with same success. On a weekend cabin getaway, we made 12 of these croissants, stuck them in a 9×12 glass baking dish and baked them in the oven, we fed a dozen people with just a little bit of work!
All you have to do is cook your scrambled eggs and bacon to your liking. Cut your croissant similar to how you would cut a pita for stuffing, down the middle but so that it has a pocket. Stuff the croissant with chopped spinach, scrambled egg, swiss cheese, bacon and then bake in the oven. I topped mine with more bacon and green onion once baked.
Cheesy Stuffed Breakfast Croissant
Ingredients
- 4 croissants
- 1/2 cup chopped spinach
- 4 eggs, scrambled
- 4 slices swiss cheese
- 6 strips bacon, cooked and cut small
- green onion for topping
Instructions
- Start by cooking your scrambled eggs to your preference and chopping your spinach.
- Cut your croissants down the middle like a pita and open up so you can fill them.
- Into your croissant add spinach, scrambled eggs and bacon. Add a slice of swiss cheese on top and then bake for 8 minutes at 350 degrees.
- Once you remove them form the oven top with salt and pepper, more bacon bits and green onion. Enjoy!
