White Chocolate Ginger Molasses Cookies

White chocolate ginger molasses cookies are recipe #2 of our “24 Days of Christmas” Holiday series where I share 24 recipes over 24 days as a virtual advent countdown to Christmas. Christmas is my favourite holiday, especially when it comes to baking, and I think there are endless creations that we can come up with to reflect the holidays. I’ve always enjoyed gingersnap cookies, but they are just kind of plain to me… white chocolate chips solved that problem so quickly!! I feel like cookies really need texture in order to be enjoyable and satisfying, and simply adding some whit chocolate chips to a classic cookie helps take them to another level in my opinion!

The Recipe

This is a classic ginger molasses cookie recipe with a twist! I fold in some white chocolate chips in to this recipe and roll the cookies in white granulated shower before baking for that little something extra. This recipe uses all of the baking staples; butter, sugars, flour, baking soda. We use a combination of both granulated white sugar and brown sugar for added moisture in these cookies. Ground cloves, all spice, ginger and cinnamon bring out the perfect ginger molasses flavour for these cookies; you can of course adjust the spices as per your flavour preference, but this combination is my favourite.

Once you form this cookie dough in to balls you will roll the balls in granulated white sugar before baking. Leave some room for these cookies to spread on the baking sheet.

Ingredients

  • 1 cup butter room temp
  • 1 large egg
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/3 cup molasses
  • 2.25 cups flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp all spice
  • 1/2 tsp ground cloves
  • 1 tsp ground ginger
  • 1/2 cup white chocolate chips
  • another 1/2 cup of white sugar to roll dough in

Instructions

  • Start by preheating your oven to 350 degrees and grabbing all of your ingredients. Grab a lined cookie sheet for baking too!
  • Cream together your room temp butter with your sugars in an electric mixer on medium speed until well combined. Once combined well, add in the egg and the molasses and continue to mix.
  • Combine all of your dry ingredients in a separate bowl, including the flour, baking soda and spices. Gradually add this to the wet mixture until evenly combined.
  • Fold in your white chocolate chips gently, don’t over mix!
  • Roll your dough in 1.5 tbsp balls using your hands. Put your extra white sugar for coating in a bowl and coat the cookie dough in it by rolling it around. Place 6-8 cookies on a baking sheet at a time and bake for 10 minutes, they do spread so don’t bake too many at a time!

  • Let these cool before removing from the tray. Makes 2 dozen.
