Lemon Curd Shortbread Bars

A small batch of lemon curd shortbread bars with a homemade whipped cream. The shortbread crust is made from just a few basic ingredients and this sweet, tangy lemon curd is sure to blow you away. Oh and a homemade whipped cream never hurt anyone! A dessert like this can be a challenge to make because you don’t want it to go bad, so I have created a small batch so that none goes to waste!
The Steps
- Start by making the crust! Preheat the oven to 350 degrees and grab a parchment lined loaf pan for baking.
- Combine all of the ingredients for the crust together in a bowl and mix well until combined. Transfer in to the lined loaf pan and bake for 15 minutes.
- While the crust is baking, time to start on the lemon curd! Cut up your into small chunks and put into a large bowl, set aside.
- To a pan on medium heat, add your whisked eggs, white sugar, salt and lemon zest. Continue whisking this until all the ingredients combine, for about a minute.
- Once combined, pour the lemon juice into the pan. Whisk this slowly but constantly for 3-5 minutes until it begins to thicken.
- Once the lemon curd has thicken, and while it is still hot, pour it over the cubed butter in the bowl and mix this so that the butter melts.
- Once the butter has completely melted in to the lemon curd mixture, pour it over your partially baked crust. Stick this back in the oven for 18 minutes.
- For the whipping cream, combine all the ingredients into your electric mixer and mix on high for 3-6 minutes until the cream starts to thicken into a whipped consistency.
- Once the dessert has cooked and set in the middle, remove and let it cool completely before slicing and topping with the whipped cream.Enjoy!!!
