High Protein Tomato Super Soup

High protein tomato super soup is probably one of my most favorite recipes I have come up with recently. This soup is so nutrient dense and packed full of protein, you just wouldn’t expect this for a vegetable soup! I know that when a batch of this soup is prepped in the fridge I have a week of filling, nutritious lunches ahead. You can totally adapt this recipe to the veggies you love, but here’s my general recipe.

The Process

The best part of this soup is that you can completely customize the recipe to use any vegetables you’d like. I typically go for a few fresh off the vine tomatoes, cherry tomatoes, butter nut squash, red pepper, garlic cloves and sweet onion. I roast all of this in the oven because it helps bring out the most flavour. Once all of the vegetables are soft I add them in to my dutch oven along with water, stock powder, spices, white beans and cottage cheese. Give this a goooood blend until it is super smooth and finish with fresh basil.

Stock powder is just a powdered version of liquid vegetable or chicken stock. You can instead use liquid stock of bouillon if you prefer.

This soup stays fresh in the fridge for a few days and also freezes wonderfully.

Servings 4

Ingredients

  • 4 fresh tomatoes
  • 1 cup cherry tomatoes
  • 1 red pepper
  • 1 white onion
  • 2 large cloves garlic
  • 1 cup diced butternut squash
  • 1 540 ml can of white kidney beans
  • 250 mL cottage cheese
  • 1 litre water
  • 2 tbsp veggie stock powder
  • salt pepper, olive oil & fresh basil

Instructions

  • Dice all your vegetables and add to a large glass oven safe dish. Cover in some olive oil, salt and pepper and bake for about 35 minutes at 375 degrees or until everything is soft.
  • Transfer soft, cooked veggies to a large ditch oven with 1 litre water (ish, make sure it’s enough water to cover the veggies you use) along with the stock powder. Use an immersion blender or blender to blend soup. Feel free to add any additional spices you love at this point.
  • Add beans and cottage cheese. Blend again in a countertop blender or using immersion blender.
  • Add some fresh basil and enjoy!
