Grinch Cookies

Grinch cookies are recipe #12 of our “24 Days of Christmas” Holiday series where I share 24 recipes over 24 days as a virtual advent countdown to Christmas. Christmas is my favourite holiday, especially when it comes to baking, and I think there are endless creations that we can come up with to reflect the holidays. The Recipe

These grinch cookies WILL make your heart grow a size or two, or the heart of who ever you share these with! The green colour in these cookies comes from pistachio pudding mix, which helps make these cookies soft and pillowy with a hint of pistachio nuttiness throughout. I decorated these with a red chocolate melted wafer and a hard heart candy for that extra touch! I found both of these things at my local Michael’s craft store.

Ingredients

This recipe comes together with a lot of basic baking staples. Unsalted, room temperature butter helps keep the cookies soft and chewy. We use brown sugar in this recipe to retain moisture and elevate the texture, instead of drying these cookies out with white sugar. Eggs, baking soda, and flour are non negotiables for cookies, you know you will need them! The secret ingredient in these cookies is the pistachio pudding mix, it gives the cookies an incredible pistachio flavour while also altering the colour of the cookies to a beautiful, festive green!

You could use any heart shaped candy for the centre peice of these cookies. I melted red melting wafers and piped a small dollop in to the centre to place the heart candy in to. Alternatively, you could skip out on the melting wafer and instead press the candy right in to the cookie as soon as you take it out of the oven.

  • 1/2 cup butter unsalted, room temperature
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/4 cup pistachio pudding mix, about half of the packet
  • 1/2 tsp baking soda
  • 1 cup flour
  • heart candy and melting wafers for topping

Instructions

  • The first step of this recipe is to grab all your needed ingredients and pre-heat your oven to 350 degrees F.
  • In an electric mixer, or by hand, whichever you choose, add your butter and brown sugar and mix on medium speed for a few minutes until creamed together.
  • Next, add your egg, vanilla and pistachio pudding mix to your creamed mixture and combine well.
  • In a separate bowl, combine flour and baking soda and then gradually add this to your wet mixture until combined well.
  • Time to scoop out 2 tbsp ish sized balls of cookie dough and roll into a ball. You are going to want to flatten the cookie slightly with a fork before baking as these cookies will spread, but not a ton.
  • Bake the cookies on a parchment lined baking tray for about 12 minutes. Let these cool completely before decorating.
  • To decorate the cookies in the picture, I melted a red chocolate melting wafer and stuck it in the middle of the cookie and then placed a red heart candy in the centre.
  • Makes 12 cookies! Enjoy!

These cookies come together with just a few basic ingredients like butter, brown sugar, egg, pistachio pudding mix, vanilla and baking soda. They are a simple cookie that are easily decorated to steal the heart of whoever you share them with, and they are sure to raise the bar on festive desserts!

Storing The Cookies

Like most of my cookie recipes, you could store these cookies covered on a counter top for a few days or in the fridge for a week. These cookies would freeze no problem for up to a few months.
