Slice n' Bake Chocolate Shortbread

Ingredients
  

  • 1 1/4 cup butter room temperature
  • 2/3 cup brown sugar
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1/2 cup pecans chopped
  • 8 ounces melted white chocolate for dipping

Method
 

  1. Start by grabbing all of your ingredients and a parchment lined baking tray.
  2. In an electric mixer on medium speed combine butter, brown sugar and vanilla. Mix well until thoroughly combined.
  3. In a separate bowl combine flour, salt and sifted cocoa powder. Gradually add this to your wet mixture until thoroughly combined. Fold in your chopped pecans.
  4. On a lightly floured, clean surface, roll your dough in to a log shape to size of your desired cookies and as symmetrical as possible. Wrap this in cling wrap and stick in the fridge for 3 hours.
  5. Preheat your oven to 350 degrees F. Grab your dough from the fridge and unwrap it. Slice 1.5" slabs of cookie dough and place them on a parchment lined baking tray. Bake for 10-12 minutes.
  6. Let these cool completely before dipping or drizzling with white chocolate.
