Start by creaming together the butter and the two sugars and then add the egg and vanilla.
Combine the flour, cocoa and baking soda in a separate bowl then gradually add to the wet mixture.
Once well combined fold in the dark chocolate chunks and spoon 2 tbsp of dough onto a cookie sheet for each cookie.
These cookies don’t spread a ton so feel free to flatten them with the palm of your hand. Sprinkle the pistachios, mini chips and sea salt and press lightly into the top of the dough.
Bake at 350 degrees for 10 minutes. Let cool before removing from tray.
