Sugar Cookie Bars

Sugar cookie bars are recipe #6 of our “24 Days of Christmas” Holiday series where I share 24 recipes over 24 days as a virtual advent countdown to Christmas. Christmas is my favourite holiday, especially when it comes to baking, and I think there are endless creations that we can come up with to reflect the holidays. The Recipe

If you have been following along with my recipes for a while now you know that I am a big fan of classic, nostalgic flavours recreated in to different, hopefully more simple, forms. Insert, sugar cookie bars! Instead of taking the time to cut out 30 sugar cookies, we have created these bars that you simply bake in the oven and slice up after icing. Doesn’t get any easier than that! These delicious bars are topped off with a spiced cream cheese buttercream – WOW!
This recipe includes salted, room temperature butter, eggs, icing sugar, flour and cornstarch, along with the basics like vanilla and baking powder.
Put simply, you combine this dough in your electric mixer and then transfer it to an 8×8 baking dish and bake in the oven for 25 minutes. Once cooked, let them cool completely and then ice with with a spiced cream cheese buttercream.
Sugar Cookie Bars
Ingredients
For the bars
- 2 cups flour
- 2 tsp cornstarch
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup unsalted butter room temperature
- 2 eggs
- 1 tsp vanilla
- 1 & 2/3 cup icing sugar
For the buttercream
- 1/2 cup butter
- 2 tbsp whole milk
- 1 tsp vanilla
- 1/2 tsp allspice
- 2.75 cups icing sugar
- 1 tbsp cream cheese
- sprinkles for deocrating
Instructions
- Start by preheating your oven to 350 degrees fahrenhiet, grabbing all of your needed ingredients and an 8×8 baking dish.
- Line your baking dish with parchment paper.
- Start by combining butter, eggs, vanilla and icing sugar in an electric mixing bowl on medium speed for a few minutes.
- Combine flour, cornstarch, baking powder and salt in a separate bowl. Once the wet mixture is well combined, gradually add in the dry mixture to the electric mixer. Mix well but don't over mix!
- Transfer this mixture to your lined baking dish and stick in to your preheated oven for 25 minutes.
- While this is baking, make the buttercream! Combine all ingredients in electric mixer using the whisk attachment and combine on medium speed until smooth.
- Remove your cookie bars from the oven and let them cool completely before icing them and slicing them. Add your sprinkles at the end.
- Makes about 16 bars!
