Sheet Pan Shortbread

Sheet pan shortbread is recipe #1 of our “24 Days of Christmas” Holiday series where I share 24 recipes over 24 days as a virtual advent countdown to Christmas. Christmas is my favourite holiday, especially when it comes to baking, and I think there are endless creations that we can come up with to reflect the holidays. The Recipe
Starting off this series strong is our sheet pan shortbread recipe. This is a really simple, buttery shortbread that is baked in a sheet pan for ease and convenience. The ingredients in this recipe are pretty straight forward. Cold, unsalted butter, icing sugar, cornstarch, flour, salt and vanilla bean paste. You will simply mix all of these ingredients together in a mixing bowl and then transfer to a lined 9×13 baking tray. We bake these up and then slice them in to bite sized squares that are perfect for sharing or gifting (or eating on your own!!).
Sheet Pan Shortbread
Ingredients
- 2 cups butter cold, from the fridge
- 1.25 cups icing sugar
- 3.5 cups flour
- 1/4 cup cornstarch
- 1 tsp salt
- 1 tsp vanilla bean paste
- Sprinkles for decoration
Instructions
- First step is to grab all of your ingredients and set them aside. Preheat your oven to 350 degrees Fahrenhiet.
- Grab a 9×13 baking tray that is semi deep, deeper than your typically cookie sheet. Line this with parchment paper.
- Start by combing your butter and icing sugar in an electric mixer. Allow this to mix on medium speed for a few minutes until well combined.
- Add in your salt and vanilla bean paste.
- Combine your flour and cornstarch in a separate bowl and then gradually add to the wet mixture until well combined.
- Transfer the well combined dough into your lined baking tray. Flatten out with a spatula until evenly distributed and then add your preferred sprinkles all over the top.
- Bake this for about 33-35 minutes until it is golden on the edges and set in the middle.
- Once cooked, allow it to cool and then slice in to your desired bars. I love slicing these into little two bite pieces!
