Peanut Butter Chocolate Oatmeal Cookie Bars

Imagine these gooey peanut butter chocolate oatmeal cookie bars warmed up with a scoop of vanilla ice cream on top 🤤 That’s been my favorite way to enjoy them.

Think cookies and brownies had a baby for this recipe – except you don’t want to go through the effort of rolling out all the cookies and not feeling some thing super chocolatey.

Peanut Butter Chocolate Chip Cookie Bars

Ingredients

  • 1 1/4 cups flour
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 1 egg
  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 cup peanut butter
  • 1/2 cup chocolate chips
  • 1/2 cup rolled oats

Instructions

  • Start by preheating the oven to 350 degrees Celsius and grab a 9×9 baking pan. Line the baking pan with parchment paper and set aside.
  • Combine your flour and salt and set aside.
  • In a mixing bowl, add your melted butter, sugars, egg, peanut butter and vanilla and mix thoroughly.
  • Once the wet mixture is well combined, gradually add in the flour / salt and mix well. Finally, fold in the chocolate chips and the oats gently, don't over mix!
  • Transfer this mixture to your lined baking tray. Optionally sprinkle some more chocolate chips over top before baking.
  • Bake for 22-25 minutes. Let this cool completely before removing from the tray and slicing up. Enjoy!
